Title: Beef and Parsnip Sloppy Joes
Ingredients:
– 1 lb ground beef
– 1 can diced tomatoes
– 1/2 cup ketchup
– 2 large parsnips, peeled and grated
– 4 hamburger buns
Recipe Instructions:
1. In a large skillet over medium-high heat, cook the ground beef until browned, using a spatula to break up the meat as it cooks.
2. Add the diced tomatoes and ketchup to the skillet, stirring to combine. Reduce the heat to medium-low and let the mixture simmer for 10 minutes.
3. Add in the grated parsnips and continue to simmer for an additional 5 minutes until the parsnips have softened.
4. Toast the hamburger buns in a toaster oven or under the broiler until lightly browned.
5. Serve the beef and parsnip mixture on top of the toasted buns, using a spoon to scoop out the desired amount of filling. Enjoy!
