Chicken, Asparagus, and Tomato Pasta with Blueberry Breadcrumbs
Ingredients:
– 8 oz of pasta
– 2 chicken breasts, sliced into thin pieces
– 1 lb of asparagus, trimmed and chopped
– 1 pint of cherry tomatoes, halved
– 1/2 cup of bread crumbs
– 1/2 cup of fresh blueberries
– 2 tbsp of olive oil
– 1/4 tsp of garlic powder
– Salt and pepper
– Fresh parsley, chopped
Recipe Instructions:
1. Cook pasta according to package instructions until al dente. Drain the water and set aside.
2. In a food processor, pulse the blueberries until they are crushed into small pieces. In a bowl, mix the blueberries with bread crumbs and garlic powder.
3. Heat a tablespoon of olive oil in a large pan over medium-high heat. Add chicken pieces to the pan, season with salt and pepper, and cook for 6-8 minutes or until they are cooked through. Remove chicken from the pan and set aside.
4. Add the chopped asparagus to the same pan and cook for 5-6 minutes or until they are tender.
5. Add the cherry tomatoes to the pan with asparagus, season with salt and pepper, and cook for 3-4 minutes or until the tomatoes are softened.
6. Return the cooked chicken to the pan and mix with the vegetables.
7. Add cooked pasta to the pan with chicken and vegetables. Toss everything together so that the pasta is coated with the sauce.
8. Heat a tablespoon of olive oil in a small pan over medium heat. Add the blueberry breadcrumb mixture to the pan and cook for 2-3 minutes or until the breadcrumbs are crispy.
9. Serve the pasta in a bowl and top with breadcrumb mixture and fresh parsley.
