Recipe with Tomato, broccoli,
and feta pasta salad recipe
Ingredients needed:
– 1 pound pasta (fusilli or penne)
– 1 head of broccoli, chopped into small florets
– 1 medium-sized tomato, chopped
– 4 ounces crumbled feta cheese
– 3 tablespoons olive oil
– 2 tablespoons red wine vinegar
– 2 cloves garlic, minced
– Salt and black pepper to taste
Recipe instructions:
1. Cook the pasta according to package instructions in a pot of salted boiling water until al dente. Drain and rinse under cold water to stop the cooking process.
2. In a separate pot of boiling water, blanch the broccoli florets for about 2-3 minutes, until the broccoli is tender but still crisp. Drain and rinse under cold water to stop the cooking process.
3. In a large mixing bowl, whisk together the olive oil, red wine vinegar, garlic, salt, and black pepper to make the salad dressing.
4. Add the cooked pasta, blanched broccoli, and chopped tomato to the bowl with the dressing. Toss until the ingredients are coated in dressing.
5. Add the crumbled feta cheese and gently mix into the salad.
