Ox Tail is the tail of a cow. The tail is skinned and cut into sections. Each section has a tailbone with some marrow in the center, and a bony portion of meat surrounding the tail. Popular in Europe and Asia. A very healthy meat given its high protein content and high nutrient content from the bone marrow and connective fats. The key to incorporating oxtail into a healthy meal is to portion the oxtail and to use lower calorie and lower fat ingredients. Braise for a long time at a low heat.
