This cut of beef is taken from deep in the shoulder and is known as the petite tender because it’s comparable to tenderloin in texture and shape (though smaller in size.) Rare find in grocery stores, as it takes a butcher extra time and skill to cut this tender and beefy steak. A specialty in high end restaurants, best when pan-roasted in an oven or marinated and grilled.
