Mock tender roasts come from the back of the cow and gets its name from its shape (similar to the tenderloin.) Texture is chewy and is best when cooked slowly, all day, at low temperatures. Thinly slice this roast and/or use it in soups and stews. Mock tender steak is very economical as it stretches for several meals.
