The tri-tip roast (also called a triangle roast) comes from the bottom of the sirloin. The name comes from the triangle shape (tri) and the sirloin (tip). This rich and tender, beef flavored roast is the size of a roast and the consistency of a sirloin steak. Increasingly popular roast choice, especially for small, intimate dinners. Slow-cook or oven roast and slice into thin pieces. Serve with a marinade dip. This cut of beef is rare as only two tri-tips are available per steer.
